duckonabike stated he needed a bee inside the hive to pop the achievement and I think when I did it there was one inside mine so wait for a bee to enter before taking the honey.
Things you will need for this achievement: 3 Sand, 3 Sticks, 2 Pieces of Coal, 4 Wood Planks, 8 Cobblestone, 1-5 Flowers of any kind, 3 Logs of any kind ie: Oak, Birch, Spruce, (1-2 Blocks of any kind may or may not be needed)
1st step before, after or whilst finding a beehive is collecting all the necessary items listed above, I only found the beehive in the plains biome and only ever on an Oak or Birch tree. Here is a picture of what you are looking for
https://gamepedia.cursecdn.com/minecraft_gamepedia/thumb/a/a... you will notice the two holes look black at first this is important.
2nd step, once it is found you need to make a crafting table using the 4 wooden planks, then create a campfire using the 3 sticks, 3 logs and 1 coal. Now place the flowers on the floor around the beehive so the bees can pollinate, next craft a furnace and use the sand and remaining coal to create 3 glass, now back to the crafting table and create 3 glass bottles which are used for collecting the honey.
3rd step is getting it ready to harvest this is done by placing the campfire directly under the hive you may need those extra blocks here now when it is directly under this stops bees from attacking you, also destroy any leaves blocks above to allow the smoke to rise high, so now you need to wait till those black holes on the hive are yellow or orange, and when this happens you can use the glass bottle on the hive and collect your honey.
Achievement Unlocked.
